But throughout the week I don't always have the time or nerve to really indulge in the cooking itself (I am one of those people that would describe cooking as meditative).
Then I want something quick, tasty, preferably healthy and happy-making.
Most people interested in cooking and active in the net probably know smitten kitchen by now, I have been browsing around the site lately, love the look, love the food, love the photos.
When I browse recipes I usually alter them, because I don't have all the ingredients, or I can think of something better, or because I have some food at home that needs to be used, or just because I can:)
In the following RECIPE I substituted Sweet Potatoes with Hokkaido and cilantro with Italian Parsley, both were left, cause I didn't need all of it for another meal the day before (gotta be imaginative as a single cook;)).
It was super-quick (depends also a bit on what kind of lentils you use, I used red lentils, which are done in a blink of an eye), very yummy, warming and made me feel goooood.
